Introduction

Number of Servings: 8

Ingredients

    Beans, black, 1 can
    Beans, pinto, 1 can
    Beans, red kidney, 1 can
    Green Peppers (bell peppers), 2 peppers or 1 green and 1 red, yellow or orange
    Red Onions, raw, 1 large
    Chicken Breast, 2 halves frozen
    Canned Crushed Tomatoes, 1 large can
    Salsa-Mild, Medium or Hot - to taste 1 cup

Directions

Saute onions in olive oil until clear
Drain and rinse all the beans
Cup peppers into half inch cubes
Cut chicken into inch cubes
Mix all ingredients in oven safe dish

Bake 30 minutes in 400 degree oven

Serve over rice and garnish with cheese, raw onions or non fat sour cream(not included in calorie count)

Makes 8 1-cup servings
