Egg & Cottage Cheese Bake

Ingredients

    4 whole eggs
    3 egg whites
    1 cup low fat cottage cheese
    4 slices thin bacon
    garlic powder
    salt
    pepper
    parsle

Directions

Mix together. Pour into greased muffin tins. Bake 400 Degress for 20-25 minutes.

    These were delicious!! I modified the recipie by using 2 whole eggs and 5 egg whites, roasted ham rather than bacon, and added sauteed garlic, white onions and spring onions. - 3/24/09

  • I was browsing, looking for low carb dishes for the holidays. This was very tasty, as is. The second time, I used 5 eggs, separated, and beat the egg whites until stiff. Also added a little garlic, green onions, and used ham. 1 tsp baking powder helps fluff them out a bit. Made 12. Very Good!!! - 11/25/10

  • My recipe calls for 5 eggs, 11/2 C cottage cheese low fat, 40z light swiss, 6 T whole wheat flour, S & P then add what ever veggies you want tomato & spinach or broccoli & ham. 189 calories from sonoma diet cookbook - 10/3/10
