Introduction

Serve over brown rice with a salad for a complete meal. Serve over brown rice with a salad for a complete meal.
Number of Servings: 25

Ingredients

    4 cups diced sweet potatoes
    3 cups chopped onions
    5 cups chopped celery
    3 cups chopped red or green sweet peppers
    2 bay leaves
    2 T. oil
    2 lbs. venison sausage
    5 cups canned or frozen black-eyed peas
    2 quarts canned tomatoes
    hot sauce to taste
    seasoned salt to taste
    1 tsp. pepper
    1/2 T. basil
    1 tsp. Italian seasoning
    1 T. chili powder
    1 tsp. oregano
    1 tsp. garlic powder
    2 quarts chicken broth

Directions

In a large bowl, combine sweet potatoes, onions, celery, peppers and bay leaves. Set aside. In a large kettle, brown sausage in oil. Add vegetable mixture. Continue to cook and stir mixture until onion are getting tender. Add remaining ingredients. If kettle is too full, you can add some of the broth later. Bring to a boil. Reduce heat and simmer uncovered until all vegetables are tender. Adjust seasoning to taste. You can easily half the recipe. Makes about 25 cups.
