Introduction

A creamy potato soup with chunks of potato, carrot and onion A creamy potato soup with chunks of potato, carrot and onion
Number of Servings: 10

Ingredients

    1.2 stick of margarine
    1 sm. onion (diced)
    2 carrots (med, diced same as onion)
    2 T. flour
    8 potatoes (med, diced)
    4 cups milk
    2 chicken bouillon cubes
    1/2 cup milk, hot
    1 cup half and half
    salt
    pepper

Directions

Melt margarine in soup pan, add onions and carrots allow to saute til tender. Whisk flour in and allow to cook for 1 min. Add milk, potatoes and 2 bouillon cubes dissolved in 1/2 cup of milk. Cook over heat 20 minutes until potatoes are soft and some have dissolved into mush. Add half and half and salt and pepper to taste
