stuffed chicken cutlet

Number of Servings: 4

Ingredients

    4 small chicken breasts, pounded thin or 2 large pounded thin and split in half
    1/2 C fat free ricotta
    1/2 C frozen spinach, thawed
    2 garlic cloves, minced
    garlic/herb salt free seasoning

Directions

Pound chicken breast thin. Sprinkle both side with garlic/herb salt free seasoning (McCormicks).

In a small bowl, mix ricotta, garlic, and spinach together. Can add other salt free seasonings if desired.

Place filling in the middle of chicken cutlet and fold over. Sprinkle again with seasoning. Bake at 350 for 35 minutes or until chicken is cooked.
