Low-Carb Muffins

Number of Servings: 12

Ingredients

    2 cups almond flour
    2 teaspons baking powder
    1/4 teaspoon salt
    1/2 c butter, melted
    4 eggs
    1/3 cup water
    Sweetner to taste (about 1/3 cup usually works well)---liquid preferred

    Variations: 1 cup fresh or frozen blueberries
    Apricot, take 1 teaspoon of sugar free apricot jam & push it in each muffin slightly, 1 cup frozen raspberries

Directions

Makes 12 muffins

Preheat oven to 350
Butter muffin tins
Mix dry ingredients together well
Add wet ingredients and mix thoroughly
Put in muffin tins (1/2 to 2/3 full
Bake for 15 min.
