Ingredients

unbaked 9 in pie crust
2 cups beet greens, washed and chopped
1 clove garlic--minced
1/2 cup sliced fresh mushrooms
1/2 cup minced onion
1 cup 2% shredded cheddar cheese
3 eggs
1 1/2 cup soy milk
Directions
saute onion, garlic and mushrooms until tender and mushrooms give up much of their liquid, add beet greens and 1/2 cup water. Cover and cook until greens are tender. Line a pie pan with the crust, add the beet green mixture, mix in the cheese. beat eggs and milk together--season to taste and pour over the greens and cheese. bake at 375 40-50 min or until knife inserted in center comes out clean. serves 4.
