Potato Pancakes

Introduction

Number of Servings: 4

Ingredients

    2 cups frozen shredded potatoes, thawed
    2 large egg whites
    1/4 cup whole wheat, or whole grain flour
    2 Tbls chopped onion
    3/4 tsp baking powder
    1/4 tsp onion powder
    1/4 tsp garlic powder
    1/8 tsp pepper
    2 tsp olive oil, divided
    Pam

Directions

Put potatoes in a large bowl and stir in egg whites, flour, onion powder, onion, baking powder, garlic powder and pepper.

Spray griddle or nonstick skillet with Pam. Add 1 Tbls olive oil. Press out 4 pancakes (~3" in diameter) and cook until brown and crisp. Flip and cook other side. Remove to plate and keep warm.

Put 2nd Tbls oil in pan and cook remaining 4 pancakes.

Serving is 2 pancakes
