Taco Soup with Ground Turkey

Introduction

Low Fat version of favorite recipe usually made with ground beef. Different beans can be substituted based on what you have. Low Fat version of favorite recipe usually made with ground beef. Different beans can be substituted based on what you have.
Number of Servings: 18

Ingredients

    2 1/2 pounds ground turkey
    1 small onion, chopped
    1 (15 ounce) can black beans, with liquid
    1 (15 ounce) can kidney beans with liquid
    1 (15 ounce) can pinto beans with liquid
    1 (15 ounce) can whole kernel corn, with liquid
    1 (15 ounce) can tomato sauce
    2 cups water
    2 (14.5 ounce) cans peeled and diced tomatoes
    1 sm. can green chilis (optional)
    1/3 cup taco seasoning mix
    Salt, Pepper, Garlic Salt to taste

Directions

Brown the turkey with onion in a large soup pot.. Add remaining ingredients and bring to boil. Let simmer to let the flavors run through. Serve with grated cheddar cheese, sour cream and whole grain tortilla chips if desired. Can also add olives while cooking or after (Not included in recipe above or nutritional info. Makes 18 1-cup servings.
