Balsamic Grilled Veggies

Number of Servings: 4

Ingredients

    1 medium red bell pepper (chopped)
    1-2 medium zucchini (chopped)
    1 small eggplant (chopped)
    1 tbsp. extra virgin olive oil
    1 14 oz can diced tomatoes
    1 1/2 tbsp. balsamic vinegar
    1 tbsp tomato paste
    1 tbsp dry sweetener (sugar, etc)
    1 tsp dry basil

    1 cup couscous

Directions

1. Preheat oven to 450°F. On a baking sheet or lasagna pan, lay out chopped or sliced bell pepper, zucchini, and eggplant. Drizzle with olive oil and stir. Roast for 15-20 minutes.
2. Cook couscous according to package directions.
3. In a large pot on medium heat, stir together canned tomatoes, vinegar, tomato paste, sweetener, basil, and roasted veggies.

Cook for 5-8 minutes or until
heated thoroughly. Serve warm over couscous.

Serves 2 large servings or 4 small.
