Angel Hair Chicken and pan sauce

Introduction

Ingredients

    Extral LIght Olive Oil, 3 Tbsp
    Fat Free Cream cheese, 3 ounces
    Flour, 2 Tbsp
    Chicken Broth, 1.5 Cups
    Fresh Parsley, 2 Tbsp
    Garlic, 2 Cloves
    Proscuitto, 2 Slices
    Bonless Skinless Chicken Breasts, 1 pound
    Large portobella mushroom, 3/4
    Broccoli, 1/2 cup flowers
    Angel hair pasta, 2 ounces-dry

Directions

Prepare pasta as package calles for. About 3 minutes before done, add frozen broccoli. Cut/portion chicken into 4 equal serving sizes. Put flour in zip top bag and coat each piece of chicken. Set aside. Add oil to sautee pan; add chopped garlic and sautee until garlic is softened. Add chicken to pan and pan fry on both sides, 3-4 minutes, until cooked through. ( I found that I needed more liquid so I added a couple of TBLSPS of broth to finish the cooking) Remove chicken from pan. To the pan, add the broth and scrap all the bits from the bottom. Add the chopped proscuitto and cubed cream cheese. Stir until creamy. Add cut mushroom and parsley. Drain pasta/broccoli. Serve 1/2 cup pasta with one portion chicken and 2 tbsp of pan sauce.
