Introduction

adapted feta & cheese scramble to reduce calories and fit my ingredients... turned out yummy! adapted feta & cheese scramble to reduce calories and fit my ingredients... turned out yummy!
Number of Servings: 1

Ingredients

    1 large egg
    1 egg yolk
    1T onion
    1/2 c spinach- about a hand full
    1 T blue cheese
    no stick spray - or butter

Directions

mix eggs together, chop onion
heat sprayed fry pan or butter then add onion and spinach. saute until onion is softened and spinach a little wilted
add egg and scramble in pan until cooked.
sprinkle cheese on top , let melt.
serve.
