Delicious and easy to make. Good on chicken (especially teriyaki) over brown rice. Also in a wrap with chicken, cabbage, and asian sesame dressing. Yum! Ingredients

2 Jalapeno Peppers, seeded and chopped
Cilantro, raw, 4 tbsp (remove)
Cucumber (peeled), 2/3 large (8-1/4" long) chopped
Onions, raw, .5 cup, chopped
Salt, 0.25 tsp
Mangos, 1.5 cup (about 2) chopped
Lime Juice, 1 wedge yields
Directions
Mix all ingredients and store in air-tight container in fridge. Use caution when seeding the jalapenos, as the oils from the peppers can burn or irritate skin. Makes 4 3/4 cup servings.
