Carrot Soup

Number of Servings: 10

Ingredients

    1/8 cup margarine
    1 large onion, minced
    8 cups sliced carrots
    4 cups low sodium vegetable broth
    1 cup orange juice
    salt and pepper to taste
    dry parsley

Directions

1. Melt margarine in a pot and add onions. Cook over low heat until lightly browned.
2. Add carrots and broth. Bring to a boil. Reduce heat. Cover and cook until carrots are very tender, about 30 minutes.
3. Mash carrots or puree in a blender.
4. Add orange juice and salt and pepper. Simmer until heated through. Sprinkle with parsley if desired.
