Don's Corn Muffins

Introduction

This is an enjoyable twist on the standard corn muffin. Chopped Jalapeno's may be substituted for the olives for a spicier variety. This is an enjoyable twist on the standard corn muffin. Chopped Jalapeno's may be substituted for the olives for a spicier variety.
Number of Servings: 1

Ingredients

    1 box Jiffy corn muffin mix
    1 large egg
    0.25 cup Del Monte Cream Corn
    2 tbsp sliced or chopped Ripe Olives
    A dash of water to thin the mix, but not too much

Directions

Preheat the oven to 400
Grease muffin pan, or for less fat content use paper baking cups
Blend all ingredients together with a fork, only adding a trace of water as needed;batter should remain lumpy

Fill muffin cups 1/2 full

Bake 15 to 20 minutes or until golden brown

Serve warm with sugar free jelly or a bit of butter.
