Coconut Macaroons

Number of Servings: 36

Ingredients

    1 cup Splenda
    1/3 cup water
    2 Tbsp honey
    3/4 tsp vanilla extract
    1/4 tsp sea salt
    1 large egg white, lightly beaten
    4 cups unsweetened shredded or flaked coconut

Directions

1. Preheat oven to 350 F. Lighly spray pans with Pam.
2. In saucepan, combine Splenda, water, honey, vanilla extract, and sea salt over medium heat. Bring to a boil and strir until syrup forms, about 30 seconds. Remove from heat.
3. Mix egg white and coconut in a large bowl. Add syrup and mix to form dough. Place 1 Tbsp dough about 1" apart on prepared baking sheets. Bake for 8 minutes. Turn pan and bake for 4 or 5 more minutes, or until lightly browned.

Makes 36 cookies.

  • I didn't use splenda.
    It tasted good, but it didn't "gel" together for me to flip in one piece. am I supposed to just turn the pan or flip each piece? And it took my batch a little longer to cook. but still tasted good. - 9/15/09
