14.5 oz fiber enriched ziti or penne pasta
15 oz fat-free ricotta cheese
2 large egg whites
8 oz finely shredded reduced-fat mozzarella cheese
1/4 teaspoon garlic powder
salt, ground pepper, and crushed red pepper flakes to taste
3.5 cups Easy Marinara Sauce (see my other recipes)
2 tablespoons grated reduced-fat parmesan cheese
2. Cook ziti. Drain.
3. In large mixing bowl combine ricotta, egg whites and all but 1 cup of mozzarella cheese until well blended. Add the garlic powder and season with salt, pepper, and red pepper flakes. Stir in the pasta until well combined.
4. Spread one cup or marinara sauce on bottom of pan, add half the pasta in an even layer over sauce. Top with a second cup of sauce, layer the remaining pasta over sauce. Spoon the remaining sauce evenly over the pasta, then sprinkle the remaining mozzarella and parmesan over top.
5. Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake another 10 minutes, or until cheese is melted. Let stand 5 minutes. Cut into 8 pieces and serve.
I stated 6.5 servings to get the calories correct from my biggest losers cookbook. Not sure which is wrong, but it is supposed to be 350 calories per serving at 8 servings for this recipe.
