Ingredients

    1 10oz. frozen chopped broccoli
    2 carrots, shredded
    1/2 cup chopped red onion
    3 cups vegetable broth
    1 can evaporated fat free milk
    12 oz Velveeta Light, cubed

Directions

Place veggies in pot with broth and heat until veggies begin to soften and broth is boiling. Reduce heat. Add cheese and milk. Stir to combine until cheese is melted. Add salt and pepper to taste.
