Introduction

Quick and easy, great leftover and shredded into a mixed greens salad
I found original recipe in womans day and changed a few things for our taste.
Quick and easy, great leftover and shredded into a mixed greens salad
I found original recipe in womans day and changed a few things for our taste.

Number of Servings: 4

Ingredients

    2 Tbsp White whole wheat flour
    1/4 tsp each salt and pepper
    4 boneless, skinless chicken breasts (about 7 oz each)
    2 Tbsp Olive Oil
    1 cup Medium Picante Sauce
    1/2 cup frozen corn, cooked
    1/4 cup 2% Colby Jack Cheese


Directions

Mix Flour salt and pepper, add chicken , turn to coat and shake off excess.

Heat Oil in a large non-stick Pan over medium-high heat. Add chicken and cook 8 minutes, turn and cook another 8 minutes until done.
Top breasts with picante sauce and cooked corn, sprinkle with cheese, cover and turn heat down for about 3 minutes.

Serves 4
