Mom's Meatloaf

Introduction

The stuffing makes this meatloaf melt in your mouth, so moist! The stuffing makes this meatloaf melt in your mouth, so moist!
Number of Servings: 8

Ingredients

    1 cup onion
    1/4 cup Light Zesty Italian Dressing
    1 1/2 lbs extra lean ground beef
    3/4 cup ketchup divided
    1 6oz package stuffing mix
    1 cup water
    2 egg whites

Directions

preheat oven to 375 degrees. Cook onion in the italian dressing on med heat 8-10 mins. or until onions brown, remove from heat and set aside to cool. Combine ground beef with 1/4 cup of ketchup, onion mixture, stuffing mix, water and egg whites. Put the meat mixture in a loaf pan or similar pan with sides and form into loaf. Spread remaining ketchup on top of meat and bake 55-60 mins, or until 160 degrees inside temp.

    This recipe was really good, I have made it several times, when I bake it in a loaf pan I make a little gully down the middle and put my favorite veg in such as asparagus spear and then cover it back up, when you slice it looks nice with the aspargus in the middle and tastes great too. - 5/24/09

    I followed the directions exactly and that is how I am rating it. Wonderful loaf and 8 points+ for WW. I just add a baked potato (3 pts+) or instant mashed potatoes (2 pts+ per serving) and veggies! 10-11 pts for a complete meal! Since the first time, I have made it several more times, <3 it! - 2/13/11

  • I JUST made this for Sunday dinner and my family LOVED it! It was not as traditional as my mom's meatloaf, but it certainly was a lot healthier. I changed it just a wee bit---I used the low sodium box of dressing. YUMMY! I will definitely make this again soon! - 1/27/13

  • DELICIOUS!! I added finely chopped onion, celry and a little bit of red pepper for colour. Just be careful not to add too much, otherwise your loaf will be very moist and won't slice very well. - 10/27/11

  • This recipe was awesome! The meatloaf was moist and flavorful. My step-daughter loved it and she normally doesn't like meatloaf. The next day, my husband grilled some of the leftovers and has stated that he needs me to cook this meatloaf once a week. - 8/22/11

  • Wow. I usually dislike meatloaf. But I had some ground beef and didn't know what to do with it besides the few same things I usually do. I found this recipe and I will make it again and again. Absolutely delicious. I used a greek dressing though - it was what I had on hand. - 7/17/11

    I loved this. I used mushrooms and zucchini instead of onions. I added basil. I sauted the veggies in beef broth. I used tomato sauce and brown sugar because we were out of ketchup. I eliminated the water and made the mixture into burgers to save cooking time. But the idea was yours. - 2/24/11
