Wheat Berry Salad

Introduction

Great for a snack or desert. Nutty/sweet flavor. My husband likes to mix 1/2 c of this with 1/2 cup lowfat cottage cheese or nonfat vanilla yogurt. Great for a snack or desert. Nutty/sweet flavor. My husband likes to mix 1/2 c of this with 1/2 cup lowfat cottage cheese or nonfat vanilla yogurt.

Ingredients

    2 c cooked hard winter wheat berries
    1/2 c diced apple (tart)
    1/2 c chopped walnuts
    1/3 c dried sweetened cranberries
    1 tbsp walnut oil

Directions

Wash 1 cup uncooked wheat berries and bring to boil with 3 cups water. Reduce heat and simmer for 1 hour. Berries will expand to aprox. 2 cups and will be slightly chewy. Drain and rinse with cold water. Stir in remaining ingredients. Cover and refrigerate for at least one hour before serving. Makes 12 1/2 cup servings.
