I like this receipe because I can put in whatever leftovers I find. Ingredients

    1 10 oz pkg frozen mixed veggies
    4 cups water
    1 cup low sodium chicken broth
    2 cups brown rice
    pepper
    celery 2 stalks
    1/2 cup chopped onion

Directions

This makes 8 1/2 cup servings
put water, broth, all the vegetables, and rice into a "crockpot" and cook until rice is tender. stir once in a while.
options: substitute cooked noodles for rice, add just before serving.
