stuffed cabbage rolls

Ingredients

    14 medium cabbage leaves
    1 lb lean ground beef
    1 med.size onion minced
    pepper-dash
    1 cup wholegrain brown rice cooked
    1 egg white slightly beaten
    1 cup tomato juice
    2 tbsp vinegar
    3 tbsp vegetable oil
    1/4 cup brown sugar
    1 bay leaf

Directions

Wash cabbage leaves; steam in a colander over boiling water 5-10 minutes until they are pliant eneough to roll. Remove from heat. Mix meat, Onion, pepper, rice, and egg. Place a spoonful of the meat filling on each leaf. Fold edges up over filling and fasten with a toothpick. Place in a greased baking dish. Mix and pour over top tomato juice, vinegar, and oil. Sprinkle brown sugar over top and place bay leaf on top. Bake covered in a 350 farenheight oven for 45 minutes. Remove cover before the end of cooking time to lightly brown tops.
