IntroductionGreat with sugarfree whole wheat cheddar muffins. Great with sugarfree whole wheat cheddar muffins.
1 large potato, cubed
1 medium onion, chopped
1 cup water
1 cup skim milk
1 - 10 oz can creamed corn
salt & pepper to taste
1/2 cup of shredded cheddar cheese
2. Cook for 10 - 15 minutes or until potatoes are soft.
3. Add creamed corn and water, bring to boil.
4. Serve with 1/8 cup of shredded cheddar cheese per serving.
Makes 4 servings
