Christmas Limas and 3 Pepper Melange

Introduction

Number of Servings: 4

Ingredients

    Enough Christmas Red Limas to make 3 cups once soaked and cooked
    2/3 yellow bell pepper, cut into strips
    2/3 red bell pepper, cut into strips
    2/3 green bell pepper, cut into strips
    1 red onion, halved and slices
    salt
    pepper
    3 Tablespoons blood orange vinegar or other tasty fruity vinegar such as raspberry

Directions

Presoak beans for at least 4 hours or overnight if possible. Drain water and replace. Slowly cook until beans are soft but do not over cook and let them be mushy. Drain and cool.

Slice peppers and onions. Lightly spray non-stick pan with cooking spray. Saute peppers and onions until starting to get tender. Add beans and heat thru. Add salt and pepper to taste. Then add vinegar and let cook enough to evaporate any excess moisture. Very good leftover also. Serves 4
