Ranchero Steak

Introduction

A delicious way to have steak. A delicious way to have steak.
Number of Servings: 4

Ingredients

    4 3 oz new york strip steaks
    3 cloves garlic
    1 bunch cilantro trimmed
    2 large Anaheim chilies
    1/2 tsp salt
    4 slices muenster or Jack cheese

Directions

roast chilies over flame until skin is black. Place in a brown paper bag and allow to sweat. Remove from bag and rub off skin with damp towel. Cut tops off chilies and remove seeds. Cut one of the peppers lengthwise into four equal strips. Cover and set aside. Combine the remaining chili, garlic, cilantro and salt in food processor and pulse until finely minced. Rub steaks on both sides with cilantro mixture until coated. Cover and allow to marinate for two hours. Place steaks under broiler and cook for ten minutes per side or until preferred doneness. Top each steak with a slice of pepper and a slice of cheese. Continue cooking until cheese melts.
