Ingredients
nonstick cooking spray as needed
4 medium chicken breast halves, skinned, boned, and cut into 1" strips*
1 can (14 oz.) tomatoes, cut up**
1 cup low-sodium chili sauce
1-1/2 cups green peppers, chopped (1 large)
1/2 cup celery, chopped
1/4 cup onion, chopped
2 cloves minced garlic
1 tablespoon fresh basil or 1 teaspoon dried
1 tablespoon fresh parsley or 1 teaspoon dried
1/4 teaspoon crushed red pepper
1/4 teaspoon salt
Directions
1.Spray a deep skillet with nonstick spray coating. Preheat pan over high heat.
2.Cook chicken in hot skillet, stirring, for 3-5 minutes, or until no longer pink. Reduce heat.
3.Add tomatoes and their juice, low-sodium chili sauce, green pepper, celery, onion, garlic, basil, parsley, crushed red pepper, and salt. Bring to boiling; reduce heat and simmer, covered, for 10 minutes.
4.Serve over hot cooked rice or whole wheat pasta.
* You can substitute 1 lb. boneless, skinless, chicken breast, cut into 1-inch strips.
** To cut back on sodium, try low sodium canned tomatoes.
This was good, but we had to add a lot to kick it up to a good spicy creole level. I also felt it was too sweet, which was probably caused by the chili sauce, which is basically ketchup (lots of sugar) with chilies. Still tasty though.

Was ok, but won't be making again. My husband and daughter like spicy foods, but this was very bland other than being a little spicy/sweet. We ate it only so we didn't waste it. Didn't wow us in any way.

I thought this was very good! I used cajun seasoning when cooking the chicken. I guess I also gave it a little bit of a southwest twist by using tomatoes with green chili's and a little bit of cilantro. However, I thought it still had a very southern creole taste and a good kick. Thanks!

VERY good and easy to make... Seemed to make more than 6 servings for me though, so I'm enjoying leftovers tonight! I chose carb-balance tortillas and non-fat refried beans to go with is instead and everyone loved it.

I used leftover turkey from Thanksgiving instead of the chicken and made my own chili sauce: 8 oz low sodium tomato sauce, 2 Tbsp cider vinegar, 2-3 dashes of ground cloves, garlic and onion powder to taste, 2 Tbsp of hot chili powder, and 2-3 dashes of Worcestershire sauce. It was spicy!

This was really tasty. I made a couple of substitutions (tomato puree and mild chili powder instead of the chili sauce, left out the red peppers as we're not fans of hot & spicy food) and it came out really nicely. Next time I'll add a yellow pepper too and maybe a little more chili powder.

I made this for four early to middle 20 year-olds last night (son and friends). It was perfect! However, I changed the mixture cooking time to 25 minutes instead of ten. I wanted the green peppers, celery, and onions to be softer. I can't wait to do again. It was good!

I made this for the reunion. Doubled the recipe. It was a humougous hit. I mixed in whole wheat rigatoni into it. put it in the crock pot warm all day. Had a small bowl left. Thank You so very much. I also told everyone who asked where the recipe came from. This was the 2nd post on it.

Easy to make and quite good. I substituted the chili sauce with chili powder. Used stewed tomatoes and 1tbsp of tomato paste. Will definitely make again.

This recipe is very tasty. My husband and I both liked it very much. I did feel it was a little sweet so next time I think I will add extra tomatoes and not quite as much chili sauce. I also added a little extra red pepper flakes for some extra spice.

This was pretty good. I am allergic to bell pepper so I used poblanos. Used ground red chili instead of sauce and increased tomatoes to 28 oz. Was super quick and really tasty!

I thought this was OK. I couldn't find low-sodium chili sauce in my grocery store which was unfortunate. The regular Heinz stuff has 230mg per tablespoon which would start each serving of this recipe off at 920 mg before anything else was added. Something to consider!

My husband and I really liked this. He said I needed to make it again. It is very filling and would work well on those days that you feel hungrier than a starving bear. (or freeze the extras)

This was really good! I added some oregano & a couple of bay leaves. It was okay that it wasn't too spicy because my kids really don't like spicy foods. I added some hot sauce to mine to kick it up.

This will be added to by cookbook as a new favorite! Very good even the kids liked it. I substituted Jalepeno Ketchup for the Chili Sauce..very good! I too ate it with Low Carb Whole Wheat Tortillas and thought it was excellent!!

I used Tabasco 7 Spice Chili starter and added a bit of mild green tabasco sauce to give it even more kick. It still tastes like it's missing something and that's probably the basil that I didn't have around. I'll try it again with the basil.

I got this recipe at a Heart Fair 10 years ago. I do saute the celery and onions and garlic with the chicken. I add more herbs and spices. We couldn't find the lower sodium chili sauce so we added NO more salt. Very flavorful...not bland at all.

Me and my hubby absolutely love this! I make it several times a month. I season my chicken with some creole seasoning while it's cooking (I like spicy!) and also add some celery salt. Very tasty!

It would have been better cooked a little longer. I made it with crab meat and threw that in right before it was served. Everything worked well together. Rice did seem to absorb to much of the flavor, I will eat it plain from now on.

MMMM...Delicious! What a great recipe. I just joined today and I get this fantastic Creole Chicken recipe. My whole family enjoyed it. Sauteed the vegetables first as suggested, substituted red bell peppers for the green and VOILA...I am thriled and will recommend this recipe to everyone )

I left out the chili sauce all together and used tomato sauce and added some cajun seasoning. I made a double batch so that I could have left overs .....except my daughter's boyfriend and my boyfriend gobbled it down because they loved it so much! I'll be making this again soon!

I tried it and as a New Orleans girl, I had to spice it up. i used Spicy V8 juice instead of chile sauce. I also added some cayenne pepper. Next time I think I will add some fresh peppers too.

This was yummy and different. Next time I will only use 1/4 cup chili sauce (1/2 was still a little too sweet). I used a 28 oz can of diced tomotoes and left out the red pepper flakes... made about 6 cups. Looking forward to the left overs!!

This dish is excellent! My husband & 9 yr old daughter loves it too. Quick, easy, & low-fat. Great with rice or baked potato. I also added shrimp with the chicken.

This was very tasty. I made it for my friend and he enjoyed it too. I used chili powder that I bought last week in New Mexico, which gave it an extra kick! I think that this would be even better with chicken cutlets instead of chicken breasts, they would absorb the sauce more.

Made this last night. Ran out of instant rice so I had to wait 35 minutes for the brown rice to cook. I kept this on low to keep warm while we waited. It didn't dry out, nor did the chicken get dry! It almost seemed to me that you could even shred the chicken and serve warm with tortillas.

We loved it. I can't understand someone saying it was bland - they must have left some of the ingredients out. I had to go to Central Market to get the chili sauce, but this was delish, husband liked it too, no leftovers. Definitely a keeper!

I made this yesterday and served it with brown rice and fresh green beans. It was good. I lost the recipe and did it from memory. I through it in a casserole, covered and put in oven to bake. It was very moist and had lots of juice to put over rice. I left out the bell pepper, added mushrooms.

I've been making this for a few years now (can't remember where I first saw it), and enjoy it every time. Last night DH suggested adding pineapple for a different twist. I think I'll try that next time.

Yummy!!! I don't know what others were using, but mine was very spicy..I think that they may have used the Heinz chili sauce, which is like ketchup. I used the Sun Luck brand Hot Chili Sauce in the Chinese isle.It wasn't sweet at all. I had to delete crushed Red Pepper cause I used Hot Chili Sauce

This sounds excellent, but when I make it, I'll avoid the bottled chili sauce, use more canned tomatoes and add spicy seasonings. This would also make a great base for soup, if you had any leftovers from it.

What kind of chili sauce are people using, especially those that say this is bland? I used a chili garlic sauce from the ethnic foods aisle (next to the sriracha sauce) and using 1 cup of this had my eyes and lips stinging. I'm Indian, so I'm defintely used to spicy.

OK so I must not know what chili sauce is; as I added chili sauce (paste?) 1 cup made this hotter than the hottest Mandos Chicken I have had. So spicy we couldn't eat it - what a waste.

This recipe sounded so good, I made it right away. It is delicious. I added some red pepper flakes as well, just to spice it up even more. Served over brown rice...very filling!

I used a cup of Green Chili sauce and a can of diced tomatoes with green chilis. My husband loved this and the servings were rather large, which is something that doesn't happen very often for us. Hubby doesnt like celery so we left that out. Next time, we may try adding some keilbasa.

Making creole is a personal choice of spice....i love heat that comes to the back of throat not on the lips. I used rotel original with this....used jerk spice on the chicken before i started cooking....along with cilantro.....this recipes you can make your own by using what you have at home.
