chicken Squash Soup

Ingredients

    4 cups butternut squash
    1 small onion
    1 tbsp curry powder
    1 tbsp olive oil
    3 cans chicken broth
    1 can garbanzo beans
    1/3 cup dried apricots
    1/2 cups walnuts
    1 tso live oil
    1/4 tsp nutmeg

Directions

Roast squash and onion and curry powder in oil on 425 for 20 minutes.
Combine veggies, broth, beans and apricots on stove. Bring to boil and reduce heat. Simmer, covered 10 minutes. Blend mixture.
Toss nuts. oil and nutmeg together. Bake 7 minutes until toasted. Mix nuts, soup and chicken.
