Simple Italian Grilled Chicken

Introduction

Very easy and light. Then I also have leftover chicken to use. Very easy and light. Then I also have leftover chicken to use.
Number of Servings: 4

Ingredients

    3 T Olive Oil
    1 T Lemon Juice
    1 T Italian Seasoning
    1 t Garlic Powder
    1/4 t Ground Black Pepper
    4 (6oz) Boneless skinless chicken breast (I cut them all in half to get more)

Directions

Makes8 (3oz) Servings
1. Coat grill pan w/no stick cooking spray. Heat over medium heat.
2. Combine olive oil, lemon juice, Italian seasoning, garlic powder and pepper in medium microwaveable bowl. Microwave on HIGH for 1 minute. Stir.
3. Dip chicken in olive oil mixture to coat evenly. Place on hot grill pan.
4. Cook 6-8 minutes per side until juices run clear and thermometer reads 165* F. Allow to rest 5 minutes before serving.
