Ingredients

    Pepper, red or cayenne, 1.00 tsp
    Cauliflower, raw, 1.00 head, medium (5-6" dia)
    Yellow Sweet Corn, Canned, 2.00 can (12 oz) yields
    Leeks, 3.00 leek
    Potato, raw, 4.00 large (3" to 4-1/4" dia.)
    Chicken stock, home-prepared, 6.00 cup

Directions

Clean the Leek by separating the blades and the white tender parts. Wash well. Cut up the scrap of the leeks and put to boil a while.Clean up cauliflower in to big florets. Add to pot of leek trimmings to cook till tender. Cool. Prep the cauliflower into small florets; diced stems.set aside. Remove leek trimmings from pot discard. You now have flavored water Peel potatoes and cube. Slice the leeks very thin. Now add the potato to cook until very soft. mash in the pan that they cooked in..add 1 can of corn. use either a immersion blender or other blender to make the broth potato and corn a very smooth mixture. Let cook down until it starts to get it own flavor. Now dump in cauliflower; other can of corn and salt and pepper. And other seasonings as you wish.
