Tammy's Lasagne

Introduction

We Love this homemade version with my home made sauce from the tomatoes and other veggies we grow. We Love this homemade version with my home made sauce from the tomatoes and other veggies we grow.
Number of Servings: 10

Ingredients

    1/2 box Lasagne
    8 oz.part skim Ricotta cheese
    1 lb part skim mozzarella cheese
    (may use less)
    3 C Spaghetti sauce
    1-1/2 Cups sliced Zucchini
    1 sm onion chopped fine
    1/2 C sliced Mushrooms
    1 Ex Lg egg
    1/2 lb ex lean ground beef or Turkey (Opt)

Directions

Cook Lasagne noodles (whole wheat is good) to al dente. Mix egg with ricotta cheese and set aside. Brown meat if using, and crumble. Start layering in a 9"X 13" pan by putting some of the sauce on the very bottom. then noodles, ricotta "batter" Mozzarella meat crumble then layer of zucchini and mushroom. Repeat above ending with Mozzarella. Cover with aluminum foil sprayed with olive oil, and bake 45min to 1 hr. You may add any veggies you like and omit the meat and some of the cheese if you like. Makes 8- 10 servings.
