Chicken on Sunday

Number of Servings: 6

Ingredients

    1 cup white rice (you could sub.wild or brown if you prefer)
    1 1/2 cups skim milk
    1 can cream of mushroom soup
    1 can cream of celery soup
    3 frozen boneless, skinless chicken breasts (about 1 lb. of chicken)

    non-stick cooking spray
    9 x 13 pan
    medium skillet or pot

Directions

Preheat the oven to 350 degrees. Spray the 9x13 pan with non-stick cooking spray. Pour the rice into the pan. In the medium pot, combine the milk, cream of mushroom soup, and cream of celery soup. Heat until smooth (the point is just to combine them into a sauce, not to cook them). Pour over the rice and stir together. Add the frozen chicken breasts on top (yes, still frozen - I said this was easy and quick!), cover the pan with aluminum foil, and place in the oven. Cook for 2 1/4 to 2 1/12 hours - ovens vary, yours may take longer or not (mine is always done around 2 hours). We like to serve this with a side of peas or green beans! This will serve 6-8 people, depending on how many chicken breasts you put in and how hungry your guests are. :)
