Slow Cooker Enchiladas

Introduction

a great meal to make in your slowcooker a great meal to make in your slowcooker
Number of Servings: 6

Ingredients

    1 lb lean ground beef
    1 cup chopped onion
    1/2 cup chopped green pepper
    1 can pinto or kidney beans, drained and rinsed
    1 can tomatoes and green chiles, undrained
    1 small can tomato sauce
    1 jar green sauce
    1/2 teaspoon salt (this is to taste)
    1/4 tsp pepper
    1 cup reduced fat cheese
    6 flour tortillas


Directions

in a skillet, cook the ground beef, onion and green pepper until the beef is browned. drain. Add all other ingredients to the meat mixture except for the tortillas.

In a crockpot, layer meat mixture and the tortillas. (you can also cut the tortillas up and stir them into the mixture).

Cook in the crockpot on low for 5-7 hours (until heated through)

Makes 6 1 cup servings
