1.5 cups whole wheat flour, sifted
0.5 cups whole oats
2.5 tsps baking powder
1/2 tsp ground ginger
1/8 cups sugar
1/8 cups splenda
1 cup nonfat organic milk
1/4 cup applesauce
1/8 cup oil
2 egg whites
zest of one organic orange
1 tsp orange extract
1/4 cup walnuts, chopped
1/4 cup raisins
optional glaze: 3 tbls powdered sugar, 1/4 cup orange juice, 1/4 tsp orange extract
Slowly add dry ingredients to wet ingredients. Don't overmix.
Pour into muffin cups. Bake 25 minutes at 350 degrees.
While muffin-cakes are baking, combine powdered sugar, orange juice and orange extract.
Remove muffin-cakes from oven and allow to cool for 5 minutes. Spoon 1 tsp glaze over each muffin-cake.
