Blueberry Phyllo Pie

Introduction

Yummy low fat sugar free dessert! Substitute any berries or other fruit for a change. Yummy low fat sugar free dessert! Substitute any berries or other fruit for a change.
Number of Servings: 8

Ingredients

    2 cups blueberries
    1 cup Splenda
    8 oz low fat cream cheese
    6 sheets phyllo dough
    butter spray
    1/4 cup any juice
    TBS corn starch

Directions

Turn oven on to 350. Combine 1.5 cups of blueberries, reserve the rest, with juice, splenda and thicken with corn starch in a pot. Bring to a boil and let simmer while you layer the sheets of phyllo dough with spray butter and sprinkle splenda. Bake phyllo crust for 10 minutes. Pull out and add cream cheese, blueberry mixture and put reserved blueberries on top. Bake for about 10 minutes, let cool and enjoy. Makes one pie sliced into 8 pieces.
