Ingredients

    1 cup dry kidney beans, soaked overnight in water to cover

    .5 teaspoon crushed garlic
    1 yellow onion
    2 quarts water
    1 celery stalk
    1 carrot
    1 white potato
    1 cup green beans
    1 8 ounce can low-sodium tomato sauce
    2 tablespoons parsely flakes, or 1/4 cup chopped fresh parsley
    .25 tsp celery seed
    .5 tsp dried marjoram
    1.5 tsp dried basil
    1.5 tsp dried oregano
    .25 tsp ground black pepper
    1 zucchini, chopped
    1 cup shredded cabbage
    .5 cup uncooked whole wheat pasta

Directions

Drain soaked beans and place with garlic, onion and water in a soup pot. Cook for 1 hour. Then add celery, carrot, potato, and green beans, plus the tomato sauce and all the seasonings. After 30 minutes, add the succhini. Cook another 30 minutes and add the cabbage and pasta. Cook 20 minutes.
