Barley Vegetable Soup

Introduction

Fresh and filling vegetable soup. Fresh and filling vegetable soup.
Number of Servings: 12

Ingredients

    Olive oil, 2 tbsp
    Turnips 1/2 medium, chopped
    Carrots 3 medium, chopped
    Onions 2 small, chopped
    Leeks 2, chopped
    Garlic 2 tsp
    Canned Tomatoes i large can
    Broccoli 2 cup, chopped
    Pearl barley 1 cup, rinsed
    Potatoes 2 small
    Green Beans 2 cup
    Water 12 cup

    Spices to taste:
    Bay Leaf
    Crushed chilis
    Black pepper
    Sea salt
    Oregano

Directions

Chop all vegetables and set aside.

Saute onions, leeks, and barley until onion is translucent.

Add turnip, carrots, potatoes, and garlic. Saute for 3-5 minutes.

Add water or stock and canned tomatoes. Add spices. Bring to a boil, reduce temp and simmer until veggies are tender. Add green beans and broccoli. Cook for 5 more minutes.

Remove bay leaf and serve.

Makes 12, 2-cup servings
