Ingredients

    alfalfa sprouts
    sliced tomatoes

    Salsa:
    .5 minced green pepper
    .25 cup minced scallions
    .5 tablespoon minced fresh cilantro or parsley
    .125 teaspoon ground cumin
    .125 crushed red pepper
    1 clove garlic, crushed
    1 teaspoon cider vinegar

Directions

Combine the salsa ingredients, stir well, and chill for 3 to 6 hours. Place sprouts on plate. Arrange tomato slices on sprouts and top with salsa.
