Kate's Diet Chili, Turkey Redux

Introduction

Mostly for my calculations, this is a slow-cooker version that starts with dry beans and includes turkey instead of tofu. Mostly for my calculations, this is a slow-cooker version that starts with dry beans and includes turkey instead of tofu.

Ingredients

    1 lb dry black beans, soaked overnight (if using canned, substitute 4 15 oz cans)
    28 oz can stewed tomatoes
    28 oz can crushed tomatoes
    .5 cup red wine
    1 tbsp chili powder
    .5 tbsp cumin
    .5 tbsp red pepper (to taste)
    3 cups chopped mushrooms
    1 tbsp olive oil
    3 cloves garlic
    1.5 medium onions, chopped
    1 green pepper , chopped
    20 oz ground turkey

Directions

1. Combine beans, both cans of tomatoes (stewed tomatoes drained for a thicker consistency, undrained for a more stew like appearance), red wine, and spices in slow cooker and turn on.
2. On the stove, heat olive oil. Add garlic, onion, and green peppers and cook until slightly tender. Add turkey and cook through.
3. Add turkey mixture to slow cooker.
4. Cook for 5-6 hours on high or 8-10 hours on low.
5. Serve over rice or pasta. Accompany with low fat cheese and/or sour cream.
Yield= Approximately 16 one-cup servings
