Low Fat Carnitas

Introduction

Number of Servings: 5

Ingredients

    1 1lb. Pork Tenderloin, roasted according to package directions and cooled for handling

    Juice of 2 limes

    3 tbsp chopped cilantro

    1 tbsp cumin seeds

    1 cup reduced sodium chicken broth

    Dash of Salt (optional)

    1 diced, seeded jalapeno or chile (optional)

Directions

Roast tenderoin according to package directions (to an internal temp of at least 165 degrees; can be done in advance, or a good way to use leftovers from a larger tenderloin)

When cool enough to handle, shred the meat by hand into a large mixing bowl. Add cilantro, lime juice, salt, and jalapeno, if using, and mix well.

Toast cumin seeds in a non-stick saute pan. Add pork and chicken broth, heat through, stirring occassionally to distribute heat.

Serve! Makes about 5 servings in tacos or burritos, in salad, with beans and rice, or anywhere else you'd like!
