Spinach-Cheese Bread

Introduction

This bread is delicious as a complement to soup, salad entree or just as a snack. LIke chips, it's hard to just eat one slice! This bread is delicious as a complement to soup, salad entree or just as a snack. LIke chips, it's hard to just eat one slice!
Number of Servings: 16

Ingredients

    3 cups Bisquick Heart Smart mix
    1/4 cup canola oil
    1 tablespoon dried minced onion
    3 eggs
    1 can (11 oz.) condensed Cheddar cheese
    1 box (9oz.) Green Giant frozen chopped spinach, thawed, squeezed to drain. **


Directions

1. Heat oven to 350 degrees. Grease bottom and sides of 9x5-inch loaf pan with shortening. (I used spray)

2. In large bowl, stir together all ingredients except spinach thoroughly; beat with spoon for 1 minute. Stir in spinach. Pour into pan.

3. Bake 55 - 65 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes; remove from pan to cooling rack.

**Drain the spinach in a colander or strainer; then squeeze out the excess moisture using paper towels or a clean kitchen towel until the spinach is dry.

Makes 16 slices
