IntroductionWith zucchini so plentiful in the summer, and friends sharing their harvest, I find this a very easy and enjoyable dish. With zucchini so plentiful in the summer, and friends sharing their harvest, I find this a very easy and enjoyable dish.
3 cups grated uncooked zucchini, squeezed to drain moisture
1 cup Bisquick
1 large onion, chopped
1/2 cup grated Parmesan cheese, (I use fresh grated)
1 tablespoon fresh parsley, minced
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon garlic powder
1/2 cup olive oil
4 eggs, slightly beaten
You may add cheddar cheese and sprinkle with with a little fresh oregano or fresh basil and salt and pepper. (Optional) ENJOY!
