Ingredients

1 tablespoon olive oil
1 cup frozen 3-Pepper & Onion Blend
1 can of black beans, drained
2 cups of brown rice, cooked
Directions
Preheat a big pot over medium-high heat.
Put olive oil into hot pot on stove, let it warm for a few seconds; dump in frozen veggies, and sautee until onions are translucent. Reduce heat to medium--Add beans and rice, stir until heated. Add 1/4 to 1/2 cup of broth so it doesn't burn on the bottom. Turn heat down to low, and let it slowly simmer and cook for 15-20 minutes, stirring occasionally.
