Apricot Chicken

Introduction

An Australian favourite - very easy An Australian favourite - very easy
Number of Servings: 4

Ingredients

    1 small chicken (1kg or 2 pounds) - Usually found in twin packs in Woolworths

    1 * 825g can SPC apricots in natural juice

    1 * pkt Continental French Onion Soup (Salt Reduced)

    1.5 Large Carrots cut in large chunks

    1 large stick celery cut into large chunks

    1 small can champignon mushrooms (whole)
    1.5 Tbsp white flour to thicken

Directions

Cut whole chicken into 8 pieces. (I prefer this to pieces as less fat comes off pieces.)

Add french onion to bottom of slow cooker. Add enough juice from canned apricots to make paste and then put rest of canned apricots in cooker.

Add chicken and vegetables.

Cook in slow cooker on low for 8 hours or high for 4 hours. If you do not have slow cooker, cook in oven or on stovetop on medium heat for 1 hour or so until cooked.

If you like brown top of chicken in oven/ or under grill before serving.

Serve with rice or couscous and extra vegetables (not included in nutritional info)
