Ingredients

    1 cup poached chicken, cubed or ripped into strands
    0.5 Avocado, cubed
    1 tbs. chopped fresh cilantro
    A squeeze of lime juice
    Salt
    4 Leaves of Bib lettuce

Directions

Combine the chicken, avocado, cilantro, lime and salt.
Arrange the bib leaves, and serve the chicken salad on top. You can use chicken that you used to make stock, which is extra flavorful!

    This is great! It's been hard to find Low-Carb recipes on Spark People. Most people who classify their recipes "low-carb" don't understand what REAL Low-Carb is all about! This is a LOW CARB meal! Thanks! - 3/3/09

  • made this for my lunch today. Didn't have Bib lettuce, so I used Organic Girl 50/50 which is a blend of spring mix and baby spinach. I tossed this with 1.5 tsp vinegar & oil, then added the chicken, avocado, parsley, lime and salt on top. Didn't have cilantro, so used parsley. Love this salad! - 2/11/13
