Vegetable Lentil Soup

Introduction

Hearty Vegetable Soup with Lentils! You can vary the vegetables based on what veggies you have in the house! If you want to do brown rice instead of lentils, you can do that too! Number of Servings: 8

Ingredients

    All vegetables are chopped. Combine (raw) and put into about 6 cups of vegetable broth.

    1.5 cup carrots
    1 cup leeks
    1 cup zucchini
    1 cup yellow squash
    1 cup butternut squash
    1 cup onions
    4-5 cloves garlic, diced

    1.5 cups of red lentils

    3 Tbsp of Horseradish
    1 Tbsp of Basil (vary upon taste)
    1 Tbsp of Thyme (vary upon taste)
    1 Tbsp of Rosemary (vary upon taste)
    Salt and Pepper

    Let simmer on medium heat for about 45 minutes until all vegetables are soft. At 30 minutes, add the lentils. Let simmer for remaining 15 minutes.

Directions

Makes about 8-1.25 cup servings!
