Black Bean Chicken Soup

Ingredients

    1 Medium Onion, chopped
    1 large clove garlic, finely chopped
    1 medium carrot, chopped
    2 teaspoons chopped fresh parsley
    2 ounces Jennie'O Turkey Store Turkey Ham
    14.5 ounces (1 can) reduced sodium chicken broth
    1/2 teaspoon dried oregano
    1/2 teaspoon crushed red pepper
    1 cup canned black beans
    2 chicken breasts, cubed
    garnish with lime wedges

Directions

Boil chicken breasts and but into cubes before making soup.

Cut ham into thin strips and cook over medium heat in large saucepan, stirring constantly

Add onion and garlic and cook 5 minutes, or until onion is tender

Stir in chicken broth, carrot, celery, parsley, oregano, and red pepper

Heat to boiling over high heat. Reduce heat, add chicken cubes to soup. Cover and simmer about 10 minutes. Remove 1/2 cup beans and mash with fork.
Add the mashed beans and whole beans into the broth and heat through.

Serve with lime wedges.
