Potatoe cakes

Introduction

Great side dish to use up extra mashed potatoes Great side dish to use up extra mashed potatoes
Number of Servings: 10

Ingredients

    6 potatoes (I do not peel)
    1 med Onion
    1 stalk of celery
    1 Tbl dried Parsley
    2 eggs
    about 1 oz milk
    1 tbl soft marg.
    3 tbl. extra virgin olive oil
    Flour (about 2 Tlb)

Directions

Cut potatoes and place in pot to boil as if to make mashed potatoes. While boiling chop onion, and celery. When soft mash potatoes with soft margaring and milk. Add egg, onion, celery, and parsley. Mix well and form into patties (will be wet)
pat a small amt. of flour on both sides and fry in olive oil on med. heat until golden brown. These may also be baked if you prefer. Makes 8-10 servings
