Chicken Tetrazzini

Number of Servings: 6


    1 Chicken, cooked and cut into bite-size pieces
    8 oz. pkg. spaghetti
    1 small chopped onion
    1/2 C green peppers
    1/2 C celery, diced
    2 cans of reduced fat Cream of Mushroom Soup
    1/2 C chicken stock
    3 Tbsps. shredded 2% cheddar cheese
    almonds (optional)


Cook spaghetti in chicken stock; drain and set aside (save 1/2 C chicken stock).
Sautee onions, green pepper, and celery in butter until soft.
Put half the spaghetti in a greased baking dish. Top with half the chicken and half of the onion/ celery mixture.
Salt and sprinkle with a few spoonfuls of stock over mixture. Add one can of mushroom soup.
Repeat for another layer. Top with cheese and almonds.
Bake @ 350 for 30 minutes
