Supercharged Breakfast Burrito

There's a deli down the street that sells an incredible breakfast burrito, stocked full of yummy goodness. But it's SUPER high in fat.So this is my attempt to make a healthier alternative. There's enough protein and fiber in just one serving to fill you up for most of the day!!

Number of Servings: 3
Ingredients

* Papetti All Whites (egg white substitute), 1 cup
* Jennie O Turkey Breakfast Sausage Links (2 Links), 1 serving
* Butterball Turkey Bacon (3 Slices), 1 serving
* OLE Extreme Wellness, High Fiber Tortillas (1 Tortilla), 3 serving
* *Potato, raw, 1 small, CHOPPED
* Onions, raw, 1 small, CHOPPED
* 1tbsp dried parsley flakes
Directions
Chop onion and potato; set aside.
Spray skillet with PAM and set to medium high to high heat.
Microwave bacon according to instructions, set aside.
Saute onion and potato with a little parsley until potatoes are cooked and onions are sauteed; all should be nicely browned with some crispiness.
Slit open casing of sausages and cook on MEDIUM HEAT skillet for about 5 minutes, until cooked through and brown.
Cook eggs until set. I like to "scramble" them.
Microwave tortillas for 12 seconds on high until warm.
In each tortilla:
Crumble one slice of bacon, add about a 1/2 cup of home fries (potatoes and onions); a little bit of crumbled sausage and 1/3 of the scrambled eggs.
Add tobasco to season/taste.
ENJOY!!!!
Makes 3 servings.
****You may add cheddar or jack cheese, but be sure to add the nutritional values to your tracker. I don't like cheese, so I didn't include it in the recipe.****
